I am planning on doing up 2 slabs of spare ribs this weekend and was thinking about trying something different this time around. Instead of foiling the ribs after the first 3 hrs, can I put them both in an aluminum baking pan, pour in the apple juice, and then cover the top of the pan with foil real tight and let them go for 2 hrs? Any comments on doing this? Just a thought on trying something a little different..

Yes you can do it that way. It will still braise the ribs

Great plan and makes life easier when doing multiple racks of ribs

This works great for anything you need to foil. Don't have the problem of the bone ends piercing the foil, and all your liquid draining out either. I get my aluminum foil pans from Sams club in bulk. Much cheaper and always have one on hand for this or beans, etc. when I need one.
