Guys,

Almost every BBQ joint in Georgia makes a homemade hot sauce for BBQ that is really good. I want to make some for myself, but I can't find a recipe anywhere. Its always a light brown/tan in color with little red specks....

Anybody have a recipe or any ideas?

I'd try talking to some of the owners. Maybe one of them would be nice enough to point you in the right direction.
 
med. onion minced,sauted in 1/2 pound oleo.
1 pint water, 1/3 cup vinegar
1 tsp dry mustard
1 tbs sugar, worcestershire, tobassco, fine black pepper, peppercorns, salt, 2 tbs chili powder, and 1/2 tsp crushed red pepper, small can tomato paste
bring to a boil, simmer 30 minutes.
 
Now I have been making my own BBQ sauce for many years now and most of the family parts rave about it and always ask me how I make it and I tell them all the same. Just go over there in the kitchen and open the re frig and then the spice cabinet and start mixing. I always start with some really cheap BBQ whats ever on sale as a base and then I start making up0 combination of things and keep tasting cause you know your not cooking if your not tasting. Then when I'm happy with the flavor I'm done and another batch is ready. But then I have got jeff's rub and sauce and they are really good and I use them (the rub more) all the time. Some of the other sauces in the marinade and sauce section here is really good to. I use allot of different sauces when I take food to others so they will have a verity to chose from. So don't be afraid to try something new for you will never know until you have tried it.
PS. Try the mayo based Alabama white sauce I did and I'm still have the jury out on that one.
