Snake Bit Chicken ....When to Inject....

Aloha,

I was planning to a couple of Snake Bit Chickens this weekend. The plan was to rub em and leave em in the refridgerator overnight. I was planning to inject them using Rick's injector brew. When would be the best time to inject? Same time I apply the rub? Morning of the Smoke?

Well I inject mine when I rub the night before so all can marinate in the fridge. Yes some liquid comes out and is in the bottom of the pan but the chicken has been setting in it all night anyway. Works for me.

I just pour what liquid is at the bottom of the pan over the birds once they are on the smoker. Can't waste that good stuff~

Please just make sure you do not baste with the leftover marinade later in the smoke without bringing it to boil first for saftey.
