Picked up a couple butts and a loin at Sam's yesterday. Had a trimmed brisket in freezer from when we got our beef last spring. Fired up Bula(wife named the smoker before we went to Clinton) this morning and got her up to 400*, put the brisket over the fire box for 15 minutes per side to start. During the last 15 min. I shut her down and opened the doors to cool down. Placed the brisket in a foil pan and back in. Being the brisket is trimmed and no fat, I put an old grill grate over the pan and placed the butts on top, to baste the brisket as they cook. Also doing 1/2 the loin, other half I'm trying Morton's canadian bacon. Thew on fatties, bologna, and pig candy. Doing ABT's when the fatties get done. Should keep me out of trouble for a while today.
Sounds great Steve. I love the name of the smoker, I didn't catch it at the gathering. Sounds like ya'll will be doing some fine eating later on

I know that load of meat didn't come close to filling Bula, she's a large lady!

Question: Sounds like you are searing the brisket, have you done this before and if so does it improve the finished product?

Sorry folks but I don't have a camera yet. The butts were fall apart tender, just great. The brisket was good, and buddie said it was as tender as any he had eaten. Sliced the brisket and of course he had to take one of the thicker pieces, and used a plastic fork to cut off his first bit. Should have seen the look on his face. Fatties, bologna, ABT's, and pig candy were also a big hit. We liked the ABT's with shredded fattie in the cream cheese the best. Took some brisket, pulled pork, and 2 slabs of ribs to work today for the guys for dinner and it was a big hit. Boss wants to know how to do ribs now, as he says,"his suck" so I told him I would try to help him out sometime with a rib cook. All in all it was a great smoking weekend, and am going to call smokinmeat and let him know you folks are looking for his pics as he does have a camera and told me he had taken pics.
Deb, wish I had a dig. camera. Pics would have been in line. Fattie ABT's would make a meal IMHO.Every thing was great.

From what I saw at the get together, your boss couldn't ask for a better teacher. What he probably doesn't realize is that he won't be able to buy as fine a smoking machine as Beula, and he might have a little difficulty finding a rick of that wonderful cherry wood you used.

Folks, for those of you that weren't there, the Shortone gave a demonstration of what spare ribs are all about!!!

BTW, Steve, I have a digital camera sitting on the bench in our foyer. I've been waiting for the Smoky Okette to find your address in her purse, and I've begun to think she won't find it until the season changes and she changes purses. If you'll PM me your address, I'll get it coming.

Sounds like quite a cook you put on , maybe you'll have some pix for us on the next one.

Bertha, my smoke belching lady, is still in the shop, so I haven't been doing much, though I did split up some of your cherry and smoke some salmon and brats, or should I say some of what cherry Bud didn't cabbage onto before I got there!
