okay the breast has been in for about 2 and a half hrs..its been sitting at 138* for about 15 mins..the brinkman is holding at 225...should i add some more mesquite chunks to bring up the temp or let it sit? its my first breast
 
If I hadn't replied, welcome to the SMF.
Did you calibrate the therm? Poultry can be smoked at high temps, if you want a more crispy skin, I have smoked at 450 for an hr., only to drop it to 350 for the duration on chicks. WD had a good one by asking if you've moved the probe to another part of the bird.
