So I saw that we have a new group called the wisconsin group which made me think of Cheese so to celebrate I am smoking some cheese.  I use a bread pan that the Mrs. did not want and drilled some holes in the bottom, and light off about three pieces of charcoal and cover with charcoal.

enjoy as they are in the smoker as I type


 
I tied to keep it below 90 deg F as cheese starts to melt past there.  (got watching sports and temps started to get away on me

 )    I put a tray of water in there to help with a bit of a heat sink.  I usually smoke it for 2-2.5 hrs.  Hope this helps
