Yes, as long as the gunge is heavy enough to not bend, or you have enough support. I have two taco shell makers made from expanded. I coated both in flaxseed oil and baked at 475°. I store then outside under my BBQ and they still look like they did after coating and baking them.
You sure can. These are the racks in my smoker when it was new. As you can see they are framed in angle iron which is something I would certainly recommend as it adds a lot of strength to them. They work excellent!
