I think I just found the awesomest forum on the internet!!! This site totally rocks! My wife heard me lusting over my buddy's smoker and got me one for Christmas. Last weekend I fired it up officially developed a smoking addiction. So far i've done pulled pork, chicken, beef spare ribs and I got some baby backs on right now. The smoker I am using is a El Cheapo Brinkmann. I did the leg mod and put a grate in the bottom of the fire pan. i drilled 6 - 1/2" holes in the bottom of the fire pan. I also drilled 4 1/4" holes in the lid for more airflow. One of the biggest challenges I'm having is getting the thing up temp. Last saturday, on its maiden voyage, it ran right up to 240 and stayed right there. It was after that smoke that I did the mods. Monday and today I am having a terrible time with the temp (monday it was rainy/windy, today is windy. I have a windbreak ariund the smoker and it doesn't seem to help) To raise the temp do I need more airflow on the bottom or the top? Does it work to open the door to increase airflow?
