Smoked Wild Caught COHO on Qview

Found a nice side of wild caught at the fish mongers today.

Brined it, and the cure is using sodium nitrate.

Qview says it all

After brine, then the rub cure, wash and smoke

Bring the smoke up to speed

And the fine fish known as Alaskan Wild Caught Coho is on its way to becoming...... something wonderful!

Under temperature monitoring, of course.

Finished view in about four hours!

Mmmm... I too found some Wild Coho on sale at my local market. It just came out of the smoker. I'll post pics as soon as the snack sticks are done too.

Looks good I just talked with a guy yesterday saying he was going salmon fishing this week so I told him I would smoke em up for him as long as i get to keep some. I wished him luck
