Over a year ago I had posted a smoked tuna loaf with no pics and was going to make another one here soon with pics. Well I could not find my recipe and did a google for tuna loaf recipes, there are alot of them, but one recipe which is an atkins diet recipe replaced the usual breads crumbs with pork rinds. So I decided to smoke some. I was originally going to cold smoke but had the last fatty still in at 225 and just switched from apple to maple. I put about a dozen not real fresh large pork rinds in for 1/2 hour. They had a better crunch than fresh with a nice smokey flavor. I will be doing more soon but at 200 for and hour with hickory. you should try this.
 
i don't eat em, but momma does........we have a mex store that makes em fresh........told her about it, to try tomorrow when i do the catfish......but she kinda turned her nose up at it.........hehehe........i must be smoking her out..........LMAO
