Hey yall, I am pretty new to smoking meats. I recently did a pre-Thanksgiving trial of Jeff's Smoked Maple BBQ turkey recipe and it turned out amazing. Has anyone out there tried this recipe with just a turkey breast? And would anyone have any recommendations on modifying time or temperature when just smoking the breast? I am using a Traeger pellet smoker and my breast is about 9 lbs. Thanks for the tips!

Best advice I can give is to cook the breast a day ahead using the recipe, carve after a rest, put the carved meat into foil pans with a little broth to keep it moist during the reheat on Thanksgiving Day.

I will cook my turkeys Wednesday, carve, and reheat while I'm double smoking a ham on Thanksgiving Day.

I been bit too many times by having a set time for the big meal only to have the meat not cooperate, and a pissed off wife cause it ain't done yet lol.

Do the maple pellets give it a 'pancake' flavor? Every time I eat maple smoked bacon, I think or taste pancakes. I not a great fan of pancakes. Waffles yes, pancakes no.
