Smithfield Extra Tender Frozen Pork Spareribs ?

I guess it depends upon whether the pig had a lot of meat on his bones. And then the packager is probably gonna sort out the thicker racks from the skinny ones.

I like how Sams cuts that breast bone off, I don't have to pay for it.
The meat cap on spare ribs is called Fresh side and is where the majority of bacon comes from. This cap is typically around 1 1/2 to 2” thick. Sometimes they get hogs with less than 1 1/2 thick cap on the ribs, it’s to thin to make bacon. So my guess is they trim some of the fat off for sausage and leave the extra meat on the bones to sell. My guess is they make more money selling on the rib vs cutting off for sausage because on the rib you are paying for bone weight, where sausage it’s just meat and fat.

Update ........... Found a two pack of whole spares at Sams that weighed right at 11.5 pounds. That's more than the Smithfield I'd been buying at Walmart.

And I smoked them today on my Franklin pit. They're the big meaty ribs I've been looking for. I just need to pay more attention to the weights.

I searched for Prairie Fresh but could not find them. Occasionally I see them at local grocer.

But I talked to a guy at a meat market , that the Prairie Fresh web site said carried their product, and he said they'd not had them in a long time. He said they were Seaboard, whatever that meant, and I would not find them locally .

But hey, I'm thrilled with these Sam's ribs. I just gotta pay more attention to the weight. And Sams takes the breast bone off. I don't pay for it or deal with it.
 
Are you aware that smithfield is owned by the chinese government.

I got 99 problems and that ain't one of them.

They grow the pigs here. They grow the grain for the pigs here. They employ over 50,000 Americans and contract with over 2,000 local pig producers.

The amount of land they own is minute and the amount they can own is controlled by Congress.

I'm just looking for a good meaty rib. I'm not out to solve the world's problems.

And as P PPG1 has stated, if you're avoiding Chinese products, you're SOL. Life is filled with compromises.
 
If you see Prairie Fresh pork products, they are top notch. One market even grinds an 80/20 blend from butts.

Funny you said that. Last week found this brand baby backs at local grocery market. They were the best ribs I have made and eaten in years. Everyone that ate them felt the same. The meat and fat content was perfect. I can't wait to purchase more!

The " where to buy " page of the Prairie Fresh website, says Walmart carries those products here in my area. But they're not on the Walmart website and I can't drive around to every Walmart searching for them.

Also said they were at Wheelers Meat Market, but the owner told me they'd not had them in a long time.

Seaboard Foods is a processing plant... or maybe should say company. They have one in Sioux City Iowa... not sure of where there are others.
