Made another 5 pounds Slim Jim's to Christen the new MES 4o BT 

This batch I added more pepper and some Cajun Spice mix

       Slim Jims 5 pounds new recipe
 1 tsp. cure #1
 1 Tbsp. Paprika
 1 Tbsp Smoked Paprika
 3 Tbsp. ground mustard
 3/4 tsp. Black Pepper
 3/4 tsp. White Pepper
 3/4 tsp. Cajun Spice 
 1/4 tsp. celery seed
 1 1/2 tsp. ground Nutmeg/ I used Mace this time 
 1/2 tsp. garlic powder
 1 oz. salt
 3/4 oz. dextrose
 2 oz. Fermento

Taste great smoked for almost 8 hours adjusting temp every hr.

These were made on Monday smoked on Wed.


New smoker warmed up


Hung to dry a little then smoke added,one row of pellets you can hardly see in


TBS Rolling


Let them cool no water bath.


SWMBO grabbed one broke it in half,I was surprised she was sharing LOL

Funny, that was MY exact first thought when I saw the pic.!!!

Those sticks are looking good Richie.  I think the extra seasoning you added will really kick it up a notch.

CM thats what happens when you forget ( get old) were the AMNPS is LOL seasoned with  no smoke.But it works Thanks for the point I appreciate it

Nice looking stix, Richie! How do you get them all straight like that? Mine are kind of loopy..
Points for the new smoker, but maybe you should have posted an "after" shot :-)

My first batch was all hanging,what ever way.So I made sure they were equal length before hanging,I use 8" and tie as I go thanks again
