Shuffle yer bacon!

    Have just stumbled on a neat trick. I made some bacon from the ends of a couple butts. While slicing, of course ya get some almost all meat slices. When vac-packing or bagging for later use, slip some fattier strips in with the leans. Sure helps the cooking process.
