Shotgun shells - questions, the build, and the smoke

OK today is the day. They are finally smoked.

First I have a doctors appointment in the early morning hours. So the Beer-pole was asked to expand it's repertoire.

What's more fitting to get prepped for a doctors appointment then a Dr. Pepper.

Onto the 22" kettle with a charcoal basket. Using B&B oak briquettes and a chunk of apple wood.

Overall these tasted pretty darn good. They aren't to hard to make, but they are time consuming. Letting them sit overnight in the fridge I think really helped with the noodles. We didn't get any that hard spots. Even where the bacon pulled away from the noodle. Will I make them again. Probably but it would have to be for a party or gathering. Oh I almost forgot. I ran my kettle in the 275* range, and they took about an hour and a half/ two hours to cook.

I travel 85 daily need to stay 10-20 over and be able to move around in traffic. That's why I drive small truck!

We usually take my wife's Charger. We fit in car style wise - except for color and our green plates. Most chargers down there are black. The last time I was there. I had to travel in excess of 90 just to keep up. I didn't dare slow down or cross lanes, and I was still getting passed. The only place that is worse that I know of is driving in Manhattan. Talk about some freaky drivers.

Appreciate it cpt. The cheese held up meaning no melt out in the kettle, but the flavor was overpowered by all the other ingredients. It was more like a background flavor.

You can get a ticket for "impeding the flow of traffic " if running under 85 on 85 or I16😂. Or risk getting a whiplash lick.

Ha you aint' kidding about impeding the flow of traffic. I make sure to pack a few extra skivvies every time we head down that way. You basically need 4 wheel drive to give our interstate a go. So I'm not used to playing speed racer.

Hate and despite the ATL traffic.
Daughter lives in Chamblee but luckily we miss most of the bad stuff. Just have to drive like your qualifying for the 500 when you're up in that area!

Strong work, Chris! Looks like you nailed it first time around. I don't eat the carbs as I once did but this could push me into digging out my eatin' pants.
 
They are pretty good. I'm on my fourth. My wife ate 3 which is a lot for here. Kind of surprised me.

I just got a package of powdered cheddar cheese. I make smoked Mac-n-Cheese a couple times a year. Last comment was the cheese flavor was not there. I guess he was comparing it to boxed Mac-n-Cheese where it hits you in the face.
 
I stuffed mine with cheap Banquet frozen sausages. Thawed them a bit in the microwave, rolled them a bit smaller than standard so I could place 2-3 strips of cheese slices into the noodles with the sausage. Cooked them in the toaster oven on a pan covered with foil. Rotated them half-way through. Had 'em for breakfast. Even with the major shortcuts, it took a while. Biggest regret: Should have used dry onion flakes for a bit more flavor.
 
The shells look great Chris. I know they're a lot of work, but I'm going to give them a try soon, try to impress the zoo...😄
I've seen some crazy a$$ drivers on the road between SC and Atlanta. Makes me nervous.
Few years ago, we drove I-20 to Atlanta to catch a Braves weekend series. That Friday it was raining as hard as it possibly could and those "crazy a$$ drivers" were doing 85-90. Scared the crap out of me and I had to get off the interstate. Took awhile to pry my hands off the steering wheel...😂
 
I like taking 75 straight through Atl. (no bypass)... At 3 in the morning... The curvey roads are fun... LOL...
Sounds like a fun road to be on. As long as there isn't anyone else on it.

Ha I understand that feeling on the MnC. The blue box stuff was a staple in college. I'm wondering if the Jack cheese diluted the sharpness of the cheddar.
