sfprankster's Weekday Pork Burnt Ends

  1. Have to work tonight, so I am trying a shortcut to make pork burnt ends by using a pack of csr's. It didn't take long to smoke them to 150 internal temperature, over a mix of cherry and hickory. I let them rest uncovered, chopped them into bite size pieces, and proceeded to cover with a tomato and honey based sauce, to finish the smoking. 

    Applied a quick rub of salt, pepper, garlic and onion... [​IMG]

      

    Resting for 30 minutes before chopping into bite sized pieces and applying a SPF 50 bbq sauce and going back into my WSM... [​IMG]

      

    Now the true test of patience begins... [​IMG]

    I've never done burnt ends with pork, and the CSR idea is great!  Those are on sale regularly around here.  May have to do this soon!

    Points for the idea!

  5. After a couple hours smoking in my SPF 50 sauce bath... 

    ...opened the lower vent, a tiny bit, to bring the WSM temperature to 250-255... 

    ...a quick toss to bring  fresh pieces to the top...

    Looking tasty! Try a perforated grilling pan they cook up nicely! I got the idea here from someone!
     
  7. I didn't have any perforated pans to use here at home, so I borrowed one of my gf's cake pans. I had to convince her I wouldn't damage her pan and wrapped it multiple times with foil, before she would let me use it. Now that she smells them getting close to being finished, she's all ready to eat, and couldn't care less about her pan. [​IMG]

    I originally planned on only smoking the csr's today and finishing the burnt ends tomorrow.But, having little or no patience at the moment, I had to attempt to finish them today. 
     
  10. Had to pull them a little early, maybe 30 minutes or so, due to work... [​IMG]

    After 3 hours in my SPF 50 sauce bath. 

      

    Served with a veggie stir fry and pan fried noodles.
