sfprankster's (mis)adventures with No Peek Pulled Pork

  1. Having received a new toy in my smoking arsenal recently, the BBQ Guru DigiQ DX2. I had the opportunity to give it a test run on a 7.75 lb pork butt. I wanted to get my WSM into the "set it and forget it" zone. Overnight smokes have become too distracting, with my work and travel schedule as of late. So I pulled the trigger on a pit controller.

    No Peek Pulled Pork

    Nothing too fancy, I used a Mexican inspired spice rub for this smoke...

    This was smoked over a combination of cherry and sugar maple... 

    Since this is a "no peek" version, there are no pictures for the entire smoke, all 16.5 hours of it... [​IMG]

    Fast forward to the finished smoke... 

    After the DigiQ showed an internal temperature of 201*, I probed the pork butt to find it done, with the consistency of room temperature butter...


    First pickings....errrrr....I mean chef's treats stuck to the grate... 


    Foiled and toweled...


    Into a cooler for a rest after the overnight workout...

    Been resting for a little over 3 hours and about time to give it a pull... [​IMG]

  3. Only tools required to pull the pork butt...

    Pair of nitrile gloves and a platter...

    ...and maybe an apron... [​IMG]


    Bone pulled out cleanly with nary a wiggle...


    First pull of the butt with my thumbs... [​IMG]


    Damn, this piece looks good!!! [​IMG]

    Somehow it disappeared before getting onto the platter... [​IMG]

    All done pulling and ready to consume...

    This was the initial test run with the DigiQ. It was the easiest pulled pork I've ever done.

  11. Unfortunately I was too busy working.

    I have a new event tomorrow evening, at the Hearst Castle, that I really need to "bring it" for some new potential clients.

    This one turned out better than anything I've previously done.

    Great job.  That PP looks real good from where I'm sitting.  There are so many things you can do with leftover PP--life is good!!

    That pineapple relish looks interesting.  I've never put anything on my PP sammies but coleslaw.  Think I'll give that a try real soon.

  15. The Guru makes smoking a no brainer. No anxiousness or apprehension, just relax and let it do its thing... 

    Makes me wonder why I didn't pull the trigger on one last fall, when I was asking about it back then... [​IMG]

    I see only one feature missing, the option to scroll between the pit and food temperatures like my Maverick. Maybe I'm just missing it somewhere in the manual... [​IMG]

    Give me a few more smokes to figure out some of the nuances and I know I'm going to love it as well... 

    I try to be creative and make something different to try. The pineapple relish was something I tossed together with what we have in the fridge and on the counter. The sweet/tart of the pineapple is a natural fit for the pulled pork.

    You never know when it's going to be a home run 'til you try it. I liked it. My gf was grabbing the dropped pineapple, with her fingers, as fast as it squeezed out of the sammie.. [​IMG]  

    Besides, I have to put a California spin on everything... [​IMG]
