  1. A while back, I found a 20 lb prime, full packer brisket. When I bought the brisket, I was in the process and consideration of purchasing the Guru pit controller. Deep down, I've always dreaded doing overnight smokes and this would definitely take a while to smoke. Now that I have the Guru on my WSM, there's no limit to what I can smoke. [​IMG]

    There it is...

    Rubbed with spog only, and ready for the WSM/Guru spa treatment... 


    This hunk of brisket went on, last night at 8pm...

    ...and has been going low 'n slow ever since...

    Thanx to the Guru, I got a good night's sleep and woke up to the smells of smoking brisket... [​IMG]

    So tempting, right now, to lift the lid on my WSM and take a peek... [​IMG]

  8. Rollin' right along. [​IMG]

    Longest I ever ran my WSM on a single load of charcoal, was nearly 19 hours. I'm just now approaching 17.5 hours and based on the fan's current output, I'm sure I still have 2-3 more hours before I need to add more fuel. 

    Who'd have thunk(is this even a word?)...

    A 20 lb packer could stall for more than 5-6 hours... [​IMG]

    I want to try a prime brisky one day,how much was it per pound? I even went to Costco and they only had flats. Looking forward to this smoke finishing up! :drool

    Hate to say it, $3.07/lb... 

    So I got the biggest, most marbled one I could find of the bunch...

    They let me dig through a pallet of cases, on my own, to find the one I wanted... [​IMG]  

    Like a kid in a candy store... [​IMG]

  13. First peek of the point after 20 hours at 180* internal temperature...

    Already probe tender...

    Pulled to rest, chop and make burnt ends...


    The whole house smells sooooo good right now... [​IMG]

    The flat is still rollin' along... [​IMG]

    $3.07 seems like a good price for prime, I got a $20+ NY strip last weekend and it was a horrible hunk of meat should of stuck with some TT!

    $3.07 for single briskets and if I remember correctly, it was in the $2.70/lb-$2.75/lb range for a full case.

    It's hard to go wrong with a good tri tip!!! It's always been one of my favorites!!! I think I have 2-3 more tri tips in the freezer at work... [​IMG]

    Now that I have the Guru to run the show, briskets are back on the menu... [​IMG]

    Next step are the burnt ends... [​IMG]

  17. Flat pulled at 197* internal temperature...

    ...probe tender and juicy throughout....


    ...foiled, toweled and locked away in a cooler for a quiet nap...
