  1. We finally ran out of the hidden packages of pulled pork in our freezer from our last pork butt smoke. They seemed to pop up out of nowhere whenever I rummaged through everything. No such luck in today's search. [​IMG]  What I did find, was a 14 lb butt, hiding in the freezer at work, stashed behind a soon to be smoked 20 lb prime brisket. [​IMG]  Knowing this was going to take some time, I made some grilled fish tacos for a tonight's dinner, while I prepped my WSM and the pork butt. 

    Sugar Maple Smoked Pulled Pork

    I'm going to be switching up a few variables on tonight's smoke. Last time, I used a combination of peach and cherry for a light fruity background flavor in the pork. I still want to maintain a lighter smoke flavor as before, so I'm going to use sugar maple. A subtle change, but not extremely different. Another difference this time, I'm going to skip the foiling step and just going to run the pork butt through the smoke naked, aka rub only. The last few smokes, I've much prefered the firmer bark this method creates. I know, I should only make a single change in the process, to truly determine the differences each change creates. Sometimes, you just have to go with your gut. [​IMG]  We have a slight chance of rain in the morning. I hope it holds off until they're done. 

    Here we go again...

    To make everything fit easier into my WSM, I sliced the pork butt in half...

    ...applied a light rub...


    ...into the sugar maple smoke we go...

  2. At last check, the sky is still clear, outside temperatures in the 40's and my pork butt twins are cruising along nicely, just hit 180 internal temperature.

    Maverick alarms all set, WSM cruising along at 235-240... [​IMG]

    Looking good! I'm looking to maple brine and smoke some CSR's for burnt ends,to bad it will have to most likely wait till after the holidays.

  5. I'm partial to pork bellies in a maple bourbon brine. I've never thought about trying to brine csr's in the same way.

    Just woke up to the Maverick alarm beeping. Of course, panic sets in. 

    Almost ran myself out of fuel. [​IMG]

    Looks like a tasty smoke! I'm out of pulled pirk packets too. May need to smoke a butt one of these days.

    The more I rummaged around(home and work freezers), the more of them I would find. This last time, the withdrawals/panic began to set in when I couldn't find any more. 

    Had to pull one of the twins early, my gf wants one for slices and chunks for her soups. [​IMG]

    Gotta do whatever to keep her happy!!!

    Looks great! Save those chunks for Pasole (Pozole).

    The pasole will have to wait a day or two. My gf''s been on a mission for a Thai pumpkin(kabocha) curry.

    My pulled pork finished before the rains began.

    All cloudy with the smell of rain being overwhelmed by the smell of smoked pork. [​IMG]

    Currently resting comfortably on the kitchen counter wrapped in foil.

    Made it back home from an errand and got the chance to eat some of last night's smoked pork butt. [​IMG]

    We love the ease of preparation of the heat 'n eat meals on our road trips. Makes the time to smoke a butt or two, well worth it!!!

  19. Taking a break from making chocolates last night. I threw together a quick 'n easy meal for a lunch(9pm) break.

    We found bunches of rainbow carrots over the weekend at the local farmer's market...

    ...peeled and sliced on a bias... 

    ...English peas added for more color...


    ...sauteed in a little butter...


    ...pulled pork with a little finishing sauce...

    ...cover to steam...


    ...served with my cranberry applesauce and sauteed rainbow carrots and English peas...

    ...and a fresh blood orange Italian soda(no cream in mine)...

    Another quick 10-15 minute meal from start to finish... [​IMG]

    My gf asked me to pull one of the twin butts early so she can make soup...

    Smoked Pork Butt Roast Pasta

    Tonight's random refrigerator search reveals... 


    red bell pepper

    purple carrots





    small jar of my caramelized onions

    parmigiano reggiano

    chunk of pork butt roast

    partial bottle of white wine

    heavy cream

    From the pantry...

    a jar of our canned tomatoes

    And here we go... 


    ...heating up a little evoo for the veggies...

    ...all into the pan for a quick saute' until softened...


    ...lookin' for a little caramelization on our mushrooms...

    ...and heat through of the caramelized onions...


    ...cubes of our pork butt roast into the pan...

    ...little wine to deglaze and pull the yum into the dish...

    ...little wine to deglaze me... [​IMG]


    ...time for everyone to get back into the pot...

    ...a jar of our canned early girl tomatoes(left chunky)...

    ...brought to a simmer and reduced to intensify the flavors...

    ...serving of al dente pasta, all ready for the sauce...


    Served with a light grating of parmigiano reggiano and fresh chopped parsley... [​IMG]

    Well, maybe I'm not in so much trouble after all... [​IMG]
