Aloha,

I picked up a Smoke Vault 24 earlier this year. I thought I remember reading in the manual/material that came with it a warning about not operating the smoker at 350 degrees or higher. Was I imagining things or is that correct? I want to do a whole turkey in a few weeks and I was wondering if taking the smoker to 350 for the smoke session would be detrimental. I've done chicken in the Smoke Vault and have had good results with the Smoker at 325-330 degrees. Your thoughts? Thanks All :>)
 
I don't have my owner's manual handy, but I don't remember any mention of a maximum safe/operable temp. It seems like I seasoned mine with the temp peaking at 350* for the last 1/2 hour.

I would suggest that if you plan on smoking at 350* to season it to at least 375*, so nasties from hot/partially cured paint doesn't ruin your bird.

325* for a big bird should give good results as well, and since you've smoked yard bird at that temp, reseasoning wouldn't be needed.

Thanks Eric. I'm really enjoying the Smoke Vault and have done a bunch of ribs, Pastrami and some Smoked Marlin. Holidays coming up and I might as well start practicing on a turkey. At least I now have a smoker that can hold a turkey. :>)
 
I just got my Vault last weekend for a big smoke. I have only done one smoke in it so I haven't tried to get it to that temp yet. But I look in the manual and get back with you on that for you.
