I have seen a real craze of forming hamburger into cups and stuffing it. It looks delicious and I will try it. However, it occurred to me that If you did it on a smaller scale with breakfast sausage it would make a great appetizer.
I made 1 inch balls of my Passing Wind Estates Breakfast Sausage. I formed it into a cup around my finger.
I put a slice of jalapeno pepper in each cup.
I covered that with a plug of cream cheese.
I put another slice of jalapeno on top.
A 1 inch piece of bacon topped them off.
I put them in the Bradley at 270 F for about 40 minutes with hickory smoke.

The Verdict
These were great! The only thing I would do differently next time is to cook them on the WSM mini. They would be better with a shorter, hotter cook. The possibilities for these is endless. You could change up the fillings, use ground chicken or beef instead of sausage. I think my next effort will use chorizo sausage.
