Brine and smoke. Its that easy. I put all spice on before the smoke. Make sure you have the time. Mop with BBQ sauce if you like. I just smoked a large chick for 4 1/2 hrs. It was delicious. Good luck.

    Who knows!!??
Its easy and really yummy! do a thread search cuz there are lots of recipes in here on what and how..
Basically it is 1 cup salt 1 cup sugar per gallon of water...everyone tweeks it to there own likin' but one you brine, you will never go back....check or "congosmoker" patrick he inspired me ..here is my thread..

but really again, like a fattie the sky is the limit!!
brining is trying to balance the salt in the meat with the salt in the water so it will pull the water and whatever you put in the water into the meat...it is so...yummy!
