Roasting a turkey in the smoker

My smoker will easly reach and hold as high as 500 degrees, I was wondering about doing a wood roasted turkey,  I was going to brine them  2 15 lbs birds and get the smoker up to 500* the cover turkeys and put them in for 45 min and back off temp to 325 and finish uncovering for the last hour. Any thoughts ????
 
You essentially have a wood fired oven.  I would roast it the same way you would in a regular oven.  I have never tried the hot then normal temp. method.
