Had to work 16 hrs. on Sunday (normally my day off) - inventory, 6am to 10pm. Got'er'done, but today I'm rewarding the hard work with a nice rack of ribs. Had to look all over on a Monday to get a decent rib after the weekend! lol! Found some good ones at Albertson's... premium meat, but same w/price - $2.99 lb. But, no injections or salines, all natural, so it's worth it. Ya git whatcha pay fer. Rubbed with Robinsons BBQ rub: http://www.robinsons-bbq.com/ made here locally in Fort Worth (over on Berry St., about 2 mi. from me- great place to go eat!). It's good rub and great when you're too tired to go buy the ingredients and make your own - one bag will rub 2 or 3 ribs, and for $1.87 at Walmart it's worth it. In the fridge for a few hours, start smoking at 1pm for dinnner tonight! Do 2-2-1 vs. 3-2-1 as wife doesn't like too much smoke, and it's going to hit 100 today again so it'll be hard keeping the temp down too.

Got 'em in the ribrack on the smoker, cut into 4 pieces. Wife just called, "mandatory Happy Hour" tonight at her work, so I gotta leave'm alone for a couple hours and help get rid of the boss's money (our son, he's CEO of his own Corporation, she's his Office Director - who better to make sure the boss is on time than Mom?!). Should be ok, timing will work out about right. If not, I'll pull 'em off in foil and into the fridge, then finish them up when I get home (burp).,,

Oh, I added a gal. of water with 2 tbsp. of Rum extract and Cherry extract to pan for a little more flavor. Spritzing with Apple and Orange juice.

Well, the Happy Hour went about 2 1/2... the ribs foiled for over 3 hours and were too tender and a bit dry, but still very good! Briskets fell right off and they barely hung to the bone. Wife liked 'em, that's all that counts! We made salt potatoes and corn on the cob as sides, we're stuffed! Pics are after foiling, then sauced with Stubbs, (I've tried to make better but the wife really likes the Stubbs, so that's what we use), then cut with the briskets on one plate (for me) and ribs on the other (for her, plus for me). I've done better, but enjoyed the Happy Hour too!
