So this weekend was my true "Trail by Fire". My first big smoke on a charcoal/wood smoker. The occasion was a "Herf"... a term that cigar smokers use to refer to a gathering of cigar smokers. We had about 15-20 of us get together and my place to smoke cigars, drink beer and EAT. We made a fattie, some ABT's and 12 racks of ribs. I'm still having issues with my temps getting up. I tried lump charcoal but it didn't seem to do any better (maybe worse) than the Kingsford I'd been using - it was a store brand (Publix) and not sure how the quality is. But with some work we got it done, and they must have been good because we had 20 people go silent when they were served. Actually, everyone said the were excellent and I'd have to say that I agree. I'll smoke some more and see what I can do to control those temps.
