Yesterday I smoked a butt and 3 racks of spare ribs. I have Gosm smoker. My temps stayed between 230-240. I  did not foil them and they smoked for almost 5 hrs. when it got time to cut in to them I noticed that they was wanting to break apart as I cut them. Did I over cook them you think or what. as far as taste they it was really good and they was very tender. what can I do to the next time to make them more firm on the out side but still tender on the in side.
