Picked up 24lbs of spares at Sams club last night at just under $2/lb - nice looking racks, too if anyone's looking to grab some themselves. Anyway, tonight I rub, tomorrow I smoke... I'll toss some Q-view on later... My little 2 year old son was saying "daddy smoke ribs" before I put him to bed last night. I don't know if he'll eat any of them, he's in his "I'll eat what I want when I want and scream at the top of my lungs if I'm not interested" stage... also have a daughter who just turned a year last month - SHE'S my little carnivore already

I'm hungry!
It makes you feel good when the little ones appriciate the Q, My 2 year old neice will come up to me from tiime to time and ask me to cook ribs. I never have been able to tell her no; i just wish her mom wouldnt cut the meat off the bone. Cant wait for the pics, good luck.
Yeah, I love it when the younguns like your Q. My kids and grandkids all love it when they smell smoke around my house... "Can we stay for dinner?" is usually the response.
Yep when the little people like it and eat it.. you know you did good... and that's what it's all about

Well, here's the results of the 24-pound rib smoke today... I used rib racks to fit them all in there for the 3 hours in smoke... had to overlap some for the last hour, but they still turned out great. Also tried my first fatties... one with garden veggie cream cheese and the other with extra sharp cheddar... I'll have to work on the fine art of the fatty later. Also see are the 2 new thermometers I installed on the CG.

I was out of commission yesterday taking care of a sick wife and kids. Just wanted to share a couple of things. First, as predicted my son Julian turned his head from the ribs. He did eat some fatty though - said it was yummy. My daughter Alexis on the other hand, clapped when she ate the ribs. That was better than the compliments from my wife and neighbors. Anyway, I just wanted to throw a thanks out this whole board - this was the first time I used the 3-2-1 method and the best ribs I've ever done.
