My Name is Aaron and I currently live in Monroe, NC (near Charlotte). I have used the message boards for years and i have been away with life for a long time (a few years). I used to live in Winston Salem, NC and before that i lived in Virginia (where I'm from). Even when i was away i was smoking pretty regularly.
I started this hobby with a $35 Smokin' IT little vert smoker and moved up in smokers and equipment to what i have now: 48x24 offset, Large BGE, sous vide set up, meat slicer and other bells and whistles. I have owned 4 Langs along the way as well a WSM and Weber kettle. I have always like offsets. I really like tending a fire and doing it old school. (and it tastes better!)
My favorite thing to smoke is ribs, esp. pork ribs and consider myself very good at them. I'm decent at brisket and pretty good at most other things. (I think and my family agrees). Right now i have 10 # of pork belly curing in the fridge which I'm going to cold smoke in 9 days to make bacon. some pics of what i have done recently are below. hit me up to say hi and i will be posting here and there and maybe a few new threads of my own!
