I suppose this will just have to work until Todd gets his Amazen Matz on the site.  I suppose the new non-stick foil would work the same way.

Accordion (fan) fold a piece of parchment paper (or non-stick foil) and then use a hole punch to punch the desired amount of holes.  Unfold and put on smoker rack. Since the paper is good for baking cookies and brownies, I feel that it is adequate for most smoking applications (especially cold smoking).

Okay...the idea is great, but have you tried it yet?  I have no doubt it will work.

Not, yet, just came to me this AM.  I had tried just parchment paper for some ground meat for chili a while back, but the this "holey" idea came about when seeing all the post about Amazenproducts Matz that are soon to be available.  I'm sure it will work in a pinch.
 
and the cleanup is a cinch!

Done! Along with several pounds of pellets. If not the first...one of the first. So much for my redeck mat. Dohh! Bested again by Todd! Excited about apple, alder, cherry, and blend pellets too.
 
Dunno know exactly what ur needs are (newbie here...)..but ive picked up some foil trays real cheap...11.5 x16.5"with about 1/4" holes and maybe 1" sides. They r made for grilling cut up veggies & shrimp & such. Since I rarely shop anywhere else...lol...i know i got em at either The Dollar Tree, Dollar General, or Save A Lot. I'm not prone to spend a lot of money on disposable stuff so know I didnt pay more than a buck or so. I seem to remember them being seasonal, tho, cuz i stocked up on em...so more likely NOT Dollar Tree since they have their foil pans yr round.  Just a thought.....

Those will grill nicely, but remember the more open the mat is, the more smoke can penetrate the meat.
 
Ahhhh...gotcha. And I see made a boo boo. I meant holes were 3/4" and about same distance between em running horizontally and just a tad more surface space running vertically. Id take a pic but haven't checked how to yet...sorry.

PS Tried to quote Linguica...but was using cell & it didn't cooperate I guess.
