Red Beans and Rice (so good!)

I had a kielbasa that I was wanting to use so I went with my Red Beans and Rice recipe. So good!
The recipe has a lot of ingredients but it is so worth it. Here it is if interested:
  • 4 can red beans - drained, rinsed (or start with 1 lbs dried red beans a day earlier)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 celery stalks, diced
  • 1 lbs kielbasa - diced
  • 2-3 cups chicken broth
  • 1 tsp each of smoked Paprika, Thyme, Oregano,
  • 1 tsp cayenne pepper (optional, for heat)
  • 2 bay leaves
  • Salt and pepper to taste
  • Rice - you can figure this one out
Sautee celery, onion, and green pepper (Cajun Holy Trinity) using the oil (5-10 minutes)
Add diced kielbasa...simmer (5 minutes or so)
add rest of spices...simmer a bit more. (3 - 5 minutes)
Add chicken broth and red beans - bring to boil...Simmer some more - this time about 30 - 45 minutes.
You can cook out excess moisture if needed, or mash a few beans for same effect.
I often have to add a bit of moisture to keep the consistency right.
Serve over rice.
