Hi, my name is Tom and I love BBQ I have a horizontal Chargriller somker with firebox and I seemed not able to control the temp at 225 for six or seven hours using small splits. I am 46 years old and liked fishing and camping also.
 
Welcome Tom,

I have a Chargriller ..... I use lump charcoal as the fuel and add splits (just for smoke flavor) here and there thru out the 3/4 of my smoke. You'll have to add a new 'chimney' of charcoals at the 3 or 4 hr mark. It just seems that in that little fire box that charcoal is more controlable than using all wood, if I had a bigger fire box I would love to use all wood. But with adding the splits, I get great smoke rings, flavor, and temp control. Also ..... the stock temp gauge is a piece of junk, dont rely on it ........... its wrong according to everyone thats here .... for the most part.

I recently just got a Char-griller with the side firebox, so I am still playing around trying to maintain the temp also. When I smoke yesterday I used some lump and then some Rancher briquettes and seemed to hold a better temp with that compared to today and I am trying Picnic briquettes....
 
What works best for me with the CG w/SFB is to lite generic charcoal briquettes in the chimney (they just seem to work better in the chimney the lump I use falls thru the bottom of the chimney), then add lump charcoal (it burns hotter), for smoke I use small splits (they provide a lot of heat as well as smoke). This is just what I have found & may not work for all but I thought I could just throw in my $.02
