Quick and Simple stuffed meatloaf

I just stuffed the center of a couple of meatloaves with some sliced green bell pepper and some swiss cheese. Tossed it on my UDS till I got my internal temp and wha-la. Very simple sauce afterwards of catsup, dry mustard, brown sugar and a hint of cider vinegar.

Man, that looks too simple and too good to have never done one! Got it on the brain now! Gonna give it a go next time...
 
Just start with your favorite meatloaf recipe and put what ever stuffing you want in it. Worked for me and next time other than maybe trying something else for the stuffing, I won't change a thing.
The cooked bell peppers sort of gave it that taste you get when you eat an Italian beef sandwich smothered with steamed bell peppers and cheese. Best of both worlds.

The sauce I used was 1/2 cup of catsup, 2 tablespoons of brown sugar, 1 teaspoon of dry mustard and just under a tablespoon of cider vinegar. Whisk it real good to get the lumps out. I put it on after the meat loaf was done.


***Forgot to add that I used cherry wood chunks as my smoke wood***
 
Those looked really good danbury! Almost a seasoned beef fatty, if you will. Looks like a tasty treat with a great looking smoke ring!
 
Wow, that is some great looking qview. I think I am going to have to try to get one fired on the smoker real soon! Great job.
