Question for anyone who makes chicken wings on a smoker

Know I'm a little late.When I cook my wings i do 60 min at 275 then flip them for another 20. Then turn my smoker all the way up for 10 min . I never probe them and the wife hasn't gotten sick. Iv made em maybe 18-20 times
 
Just because that's the ways you've always done it doesn't mean there isn't a need to change your habits.

An instant read thermometer can save a whole lot of headaches no matter what you're cooking.

I cant believe people would grill without a thermometer. Even if not worried about undercooking, overlooking is bad in its own right.

I’m with you. I have so many therms/probes here I could do acupuncture on the side.
