Question about pork shoulder

  1. Im planning on doing a shoulder this weekend and have found myself in a quandary.

    Do I take the skin off or leave it on?

    big rob , i personally take it off and i smoke along with the butt and give it to my dogs for a treat...good eats for them

    Cut the skin off along with some fat and make cracklins.

    I have done many shoulders and have never taken anything off. It just melts together to make smokey BBQ magic.
