Pulled Pork Tacos - Simplified and Reliable Dinner Timing

More leftover tacos……

So I thought I would show how my boy does the hot marinaded GO. He makes a little foil boat then dresses them with soy sauce, lime juice, and butter….then on the grill for some heat

He turns them as the marinade gets hot to make sure the GO soaked a bunch up…..

Then finally onto the hot grill to get some color and a little char……man oh man these are GOOD!

He saves the marinade and spoons it over the tacos…..the lime umami flavor is next level stuff!

For these tacos I made a bed of melting cheese in the griddle and placed a corn tortilla over that to create a crispy cheesy layer for the PP to sit on….. these tacos where joined with my wife’s cilantro lime dressed taco salad….. I also put a spoon of my wife’s dressing over the PP as well….

…..until morrow night for the last use of the PP….talk about stretching $13 out to make it seem like a Benjamin….

Just reading this now. Great description of the process. I had a (trivial?) question on the pulling process. Do you remove the pork from the pan, shred it, and add some of the drippings in as needed, or do you shred it in the pan with the drippings?

I remove it and then add back in the finishing sauce to personal flavor.
 
Finishing sauce!
The Finishing Sauce I use is as follows:

1 Cup Cider Vinegar
2 Tablespoons Brown Sugar
1 Teaspoon Tony Chachere's Cajun Seasoning
1 Teaspoon Course Black Pepper
1 Teaspoon Red Pepper Flakes

Finishing sauce!
The Finishing Sauce I use is as follows:

Sandy, the sauce above would be tasty for sure! I put the Tony's stuff on my brisket!
