Two chunks of pork from a pig I raised last year. Seasoned with holy gospel. Used lump and hickory wood chunks that I cut on the farm years ago. Kettle stayed around 250. Panned at 150 IT and it didn't take long to finish. Total cook was around 12 hours. Guys at work had pp from a local BBQ joint on Friday. I didn't have any but I said I can make better, so it better be better if not I wont ever hear the end of it. Going to reheat in a crockpot with the pan juices. Any way. Here are the pictures.
