Problems with my sausage, resolved !!! W/Qviews

  I was having major problems with my sausage coming out the way I felt it should

 that had gotten so far out of control that I was about to give up on making sausage

! I think I make some of the best Kielbasa and Cheddar Kielbasa I have ever eaten, this weekend!!  The mistakes I was making were so subtle

…..and if these pictures could talk we would be here all day!!!!  I had a taste test at work this morning and had rave reviews

Hi So what were the problems, and how did you correct them. My 1st try at making Sweet Italian sausage and Bratwurst, didn't come out good either. They were dry (NOT enough Fat) and the texture was not right, ground with a 5/16 plate, used the grinder as my stuffer.Hope the next time with more fat, Will solve the problem.Taste left a lot to be desired, used a pre package mix..

That looks good but sharing what went wrong and the fix will benefit many. Not to mention that Kielbasa looks soooo good how can you not share a Recipe and your new procedure...

glad to hear you're a happy camper again. Sausage looks great! Now if you could give me Joe's secret recipe for his kielbasa I'd be a happy camper too.
 
No offence to anyone, but due to an agreement that I made for his help, I can only refer you back to my mentor in this Boykjo. The only advice I can post about this is K.I.S.S. Keep It Simple Stupid!!!! Don’t over complicate it or anything that you do…. SB

Dan it sounds like there were too many to list and that KISS was the trick. I would suggest that anyone having specific issues that they post about them so we can give individual help or PM one of the know sausage makers and Im sure they will help.

Those look great. Im glad that Joe was able to help you and understand you referring people to Joe for the information. Its like sharing a recipe someone gave you in private without sending people to the person you got it from.

  Also like you said, the "KISS" method is usually the best way to go. We humans have a habit of over complicating things!
