This is a follow-up to a thread I started a few days ago.  Did this Prime Rib for some friends who will be heating it up in a couple days for Christmas 2013.

5.33 lb bone-in roast.  Spiced it up with onion powder, granulated garlic, black pepper and kosher salt last night and put it in the fridge.  Took it out of the fridge 30 minutes before it went into the smoker.

Preheat to 225.  Used 75/25 hickory/oak in the AMNPS.

Put a foil pan below the PR with some carrots, onion, garlic and a little celery seed (didn't have any celery).

Started at 12 noon.

1 pm......210 and 59  Added 32 ounces of beef broth to the pan.

2 pm......226 and 82

3 pm......235 and 113

3:30.......225 and 128  removed from the smoker and foiled.

coasted to 133

They will reheat somehow on Christmas.  Probably around 300 for an hour or so.  Not sure how to go about this.

I don't have any money shots, but here it is before foiling.
