There is pricing based on Grade but it is not unusual for meat prices to vary day to day. When the Buyer placed the order there must have been an excess of Prime and he bought the pallet load at a good price. When ordering again, even though nearly double the cost, what he paid for Choice was the best deal. You are fortunate, not all retailers will pass the savings on. Of course, the Price is added to the scale printer and check-out scanner in the corporate office somewhere. It is not unusual for a min wage data entry clerk to mess up and you benefit...All is looking real good...JJ

12 hours in...the bottom one was 195+, the top was 175...I switched them around and will let them go for another couple hours.

209 oz less the chunk I took off for dinner...so maybe 220 oz total out of 451 oz to start...

So...about $16/ pound or with spices, salt, cure about $16.50/ pound.

Ok, put the old Hobart to work. Put one of the pastramis in the freezer for about an hour. Sliced through the whole thing without any issue. Here some pics are:
