I just bought two racks of pork spare ribs. I've only smoked baby back ribs. Should I trim the spare ribs down to St. Louis ribs or smoke them as they are? Are there pros and cons to either?

If I should trim them, how would I do so? Is there a link to a video showing how it's done? Thanks!
 
Whether to trim or not is personal preference. I usually do since my wife doesn’t like the boney ends. There are many vids just search trimming ribs to st. Louis cut. It’s easy. Do trim the flap off the bottom regardless, it will over cook if left on. It’s good meat, just cook on the side.

I like them whole for the most part . Like said above square that flap off the bottom if it has one .
Are the ones you have trimmed already ? If so you can go just like that .

I used to buy them untrimmed in a 3 pack .

whole spares .

Hi Gator, that is a cured ring of ribs I did for sort of an anniversary of being on here for 1 year . back a couple years ago. I love doing things with potatoes also. It is in my signature of my posts also.
