Pork Side Recipe

    Hey Fellow Smokers!

    Got a new thing to smoke, well new for me that is. Stopped by a place called Billys BBQ in Wallace NC and bought a 4 pound Pork SIDE the other day.

    Turns out, this is a 4lb piece from the belly. It has the skin attached to the underside (didnt see that from the packaging). It has 4 or 6 spare ribs, and alot of extra "skirt" or thin pieces of meat.

    I imagine I would throw this on the smoker "fat or skin side down" and smoke it as usual, problem is I areaddy skinned it before I thought about it..... : (

    So now I got about 2.5 lbs of pork sibs with lots ofadded meat...

    What should I do to salvage this train wreck?
