Pork Picnic Brine

    I have found recipes for brines but none of them really have the amount of ingredients compared to the size of the meat. Any suggestions?

    This can be a tough one to answer, it really varies by how much flavor you want to add to the meat, and how much liquid you're using. I can't give you straight answer, maybe someone else can help you better.

    Thanks Rich, thats what I figured. I guess Ill try the recipe as is then adjust from there

    What you trying to do? Cure a ham or brine a shoulder?

    Im brining it to smoke on sunday. I dont rerally know. First big thing ive smoked.

    No need to brine a shoulder, IMHO. Smoke it low and slow, and make a mop sauce.
