I told my Grandson that I would smoke a pork butt and Ribs for his friend who gave me the new puppy.
Since I was smoking anyway, why not cook a bunch and invite the neighbors, grandson, his wife and her dad. Sounds like a Plan.

Here are some pics, But I got involved visiting and never took pics of the finished Butt's and Ribs. CRS I guess or kinda like a computer my memory is full and need to delete a bunch of stuff I don't use. Probably just CRS kicking in.

That is as far as I got with the Pics, SORRY
I smokes the Pork Butts for 6 hours uncovered, then wrapped the and put em in the oven at 225 for 4 more hours.
The beans smoked for 5 hours (no reason) just worked out that way time wise.
The ribs I used the 3-2-1 method, for me I should have gone 3-1-1 they were falling off the bone. Everybody loved them. I told them if I was cooking competition they would have gone in the trash, everybody looked up and said almost at the same time "Your Kidding" shook their heads and went back to eating. The pork Butt was super tender and moist (kinda hard to screw up a pork butt) and the beans were a hit as usual. My grandson delivered one Pork Butt, two racks of ribs, beans and tater salad to hif buddy the gave me the dog. Everyone was Happy, Happy Happy.

everything thing looks great, a lot of people including me like fall off the bone, how much heat do the jalapenos give the beans I smoke beans once in a while but was always Leary about putting peppers in, I like a little heat but don't like to burn my mouth off. you better watch though you might get a new puppy every week.

Since I was making Beans for quite a few people my Wife reminded me "Again" "Don't make them to Hot" !! I pot 3 large Jalapeno's with all the seeds and membrane removed, gave them a great flavor with a tiny bit of heat (I was told)
Had they have been for me and two sons I would have gone with 4 lg. Jalapeno's seeds, membrane and all. But I like spicy

One thing I'll add is I used Pecan and Red Oak and ran between 225 and 250

As said before, A full smoker is a happy smoker! You, your family and friends must be ecstatic Gary! Congrats on the new pup! Point!
 
Gary notice you browned the bacon didn't notice this in your original recipe or I missed it.

You Scared me , so I checked here is the part about the Bacon

I start by cutting bacon into small pieces and brown till just starting to get crisp. (Not too much)

Remove bacon, drain most of the grease sweat chopped onion and Jalapeno, till tender and onion is translucent.
