Pork Butt in MES

  1. I need some help. I did a 8lb pork butt today in my 30" MES. I'm use to doing butts over wood smoked grills. How do I get the bark on the outside of my butts using a MES?

    Plan on a longer smoke. The longer you take it over 165 internal without foiling, the more bark you will get. Make sure you have plenty of sugar in your rub since that is what caramalizes with the other spices to help form the bark. A good sweet spritz like apple juice helps as well. Depending on what flavor you are looking for a 50 - 50 mix of Yoshida's and beer is a great mop too!

    That's a good point.
    No rule that says you need to wrap a butt in foil until resting time/205 anyway.
