Poblano Meatloaf with Guajillo Rub

Been longing for smoked meatloaf.
Decided to turn it up a notch with some chile peppers.

Meatloaf - 80/20 ground beef, poblano chiles and onion.
Rub - guajillo and smoked serrano chiles, brown sugar, Hungarian paprika, spices.
Topping - jalapeño slices.
Glaze/sauce - homemade smoky hot sauce, tomatoes, brown sugar, Lea/Perrins, paprika.
Smoked at 250F for 1.5 hours to IT=157.

I've been trying to find the time to do a meatloaf, and then there's this. That looks stoopid good!
 
Cold meatloaf sandwiches are what my Noni would make for us when Gramp's took us tishing.
Probably, one of my all time favorite sandwiches still to this day.

Cold meatloaf, cheddar cheese, mustard, and red onion on a hard sourdough roll. Yum!!!!!

I need to make a meatloaf soon, thanks for the inspiration.

Ha, you got us all thinkin meatloaf now. MAN that looks good. My stomach is growling for a cold meatloaf sammy right now.

I would love a pate or even a sandwich made with a couple slices .

Any other suggestions besides mustard and cheese?

I'm in the same club as Forktender! Although if I'm at home...I'll put a slice in a smoking hot CI skillet with a dab of oil...Sear one side, flip put the cheese on while the other side sear. Although aint nothing wrong with a cold sammich too!

Great looking meatloaf but I have to say the highlight to me was the video and especially the music you played with it. Great job all around what a fun, relaxing, and enjoyable listen/watch!!!!!! Truly outstanding!
