. I cut the recipe by 1/3. Had a boneless thigh to use so used that. Have one more to use up tonight. Got to love that chamber sealer to seal raw chicken! I added cheese, cilantro, jalapeno, sour cream and avocado on top. Several squeezes of lime. I will be making Jeff's Poblano cheese later this week.
1 tablespoon extra virgin olive oil
1 yellow onion, chopped
3 poblano peppers roasted and skinned
2 cloves garlic, chopped
1 pound boneless skinless chicken breasts or thighs
1 tablespoon spicy taco seasoning - Used Roberts
salt and black pepper
3 cups red enchilada sauce - I used Trader Joe's. Good stuff.
2 cups salsa verde
3 ½ cups broth
