Well, I was kinda bored last night so I thought I'd try making some pig candy.

Took 1.5 lb of thick sliced bacon, mixed up some brown sugar, cayenne pepper, and cumin and dredged the bacon through the sugar mix. Then threw it on the smoker at 250 for about an hour and a half.

I guess I was a little heavy handed on the cayenne, because this stuff sure lit me up! After the first couple pieces my nose was running something fierce and I couldn't feel my tongue. Didn't stop me from eating more though.

Anyway, learned a couple thing for next time, like cut way back on the cayenne, and rotate the smoker grills at least once. The pieces on the lower rack were charred to brick consistency, and the upper rack was just right.

Sorry, no pics so technically it didn't happen, but try telling that to my tongue.
