Picnic cut question

Hi all,

I am cooking up a picnic cut tomorrow, 8lbs but I may cut about 2lbs off because i do not want to start at 3am. I know that the picnic cut has a tough fat cap. Should I cut this off or leave it on? Thanks.

Funk,I cut the skin off of mine,but leave as much fat on as possible,just my .02 worth

is it hide or fat? Hide is grainy, tough, 1/4 inch thick. Fat is white, loose, easy to cut with a good sharp blade.

.....Same here. The fat will moisten and flavor the picnic........
