I thought I remembered someone asking for a Pickled Sausage Recipe a while back but couldn't find the thread.

Well I found one and here it is...


Pickled Sausage


INGREDIENTS
  • 4 cups water (reviews say better with 2 cups water)
  • 2 tablespoons salt
  • 4 cups distilled white vinegar
  • 10 drops red food coloring (optional)
  • 10 links smoked beef sausage
  • 2 jalapeno peppers**optional
  • 2 cloves garlic**optional
DIRECTIONS
  1. In a large pot over medium-high heat, combine the water, salt, vinegar, and red food coloring.
  2. Bring to a boil.
  3. Cut the sausage links into halves or thirds, depending on size, and place with peppers into a large sterile jar.
  4. Pour the hot vinegar mixture in with the sausage, secure the lid, and let stand for 2 days before serving.
