Peppered Venison snack sticks with pictures.

    Made a batch of peppered venison sticks this past weekend to take along deer hunting. Contains black, white, red pepper flakes and cayenne, garlic powder, paprika, dextrose, ground mustard, salt, cure and Bactoferm starter for that "tang"....

    Seasonings all mixed up along with the Bactoferm waking up in the water....

    3 pounds Venison and 2 pounds ground pork..

    All mixed up and ready for stuffing, used sheep casings, nothing compares!!

    Now to the fridge so the Bactoferm can do its work.

    One of these days I will try sheep casings. Those look great.....I will be watching.

    Bactoferm???  I use citric acid for a little "twang" to my snack sticks.

    Here's a few cut shots, these turned out much better than expected!! Smoked with the amazen pellet smoker loaded with 100% hickory pellets. Not to hot just good with a few beers..[​IMG]

    They look great. Like your spice mixture cause I do love a little heat in the sticks. Not sure you made enough though.

    Your sticks look great! You must have found a place to get good sheep casings.

    I did but they are a bit pricey. I feel it's worth it though because everyone that try's them likes the way the casings snap.

  14. Stayhot, good afternoon, I love the color of you sticks, May I ask how much Paprika you put in 5# of meat?

    My sticks are a little red But I really like the color of yours. I add 1 Tablespoon of Paprika to my mix as well as 1 teaspoon of cure 1.

    I would like to get a bit more reddish color to my sticks.

    I really don't add much more than that, 1T?? It could be from the Amesphos, it has several good qualities.

    ·          Improved cooked flavor.

    ·          Reduced loss of meat fluids.

    ·          Increased tenderness and juiciness

    ·          Improved firmer texture

    ·          Better and faster color development

    Is that a special string used to tie them off or just a regular spool of string from wally world?

    I just use regular string, I don't see the need to spend the $$ on butcher twine? I have made 100's of pounds of sticks all with just regular string.
